Recipe:

2 1/2 lbs chuck roast, cut into 1 cubes
2 Tbsp olive oil
2 medium onions, chopped
1 14.5-oz can diced tomatoes
2 celery stalks, chopped
4 medium baby red potatoes, quartered

In a heavy pot, heat oil over medium-high heat. Sauté onions until soft. Add meat and brown on all sides. Add remaining ingredients and goulash seasoning; stir to combine. Bring to a boil, then reduce heat, cover and simmer for 1 hour or until beef is tender.

Add salt & pepper to taste. Garnish with fresh parsley and sour cream. Serve over egg noodles.
